Very Veggie Breakfast Potatoes

Sweet potatoes combined with sweet red onions are a sweet combination, and a great way to get more veggies at breakfast? Combine this dish with your favorite egg recipe for a great start to your day! Can’t find sweet red onions? That’s okay. Just use regular red onions.

Makes 4 cups (4 servings)

4 cups garnet sweet potato, peeled and cubed (1-2 potatoes)
1 large green or red bell pepper, seeded, cut into large dice
1 large sweet red onion, cut into large dice (~2 cups)
3 tablespoons peanut oil
1 tablespoon Italian seasoning
¼ – ½ teaspoon crushed red pepper flakes
¼ teaspoon kosher salt

  1. Preheat oven to 425 ⁰F.
  2. Combine all ingredients in a large mixing bowl. Toss well so vegetables are covered in oil and seasonings.
  3. Transfer mixture to a 13×18-inch baking pan.
  4. Bake for 35-40 minutes, stirring every 10-15 minutes to ensure vegetables roast evenly.
