Makes 4 cups (4 servings)
4 cups garnet sweet potato, peeled and cubed (1-2 potatoes)
1 large green or red bell pepper, seeded, cut into large dice
1 large sweet red onion, cut into large dice (~2 cups)
3 tablespoons peanut oil
1 tablespoon Italian seasoning
¼ – ½ teaspoon crushed red pepper flakes
¼ teaspoon kosher salt
- Preheat oven to 425 ⁰F.
- Combine all ingredients in a large mixing bowl. Toss well so vegetables are covered in oil and seasonings.
- Transfer mixture to a 13×18-inch baking pan.
- Bake for 35-40 minutes, stirring every 10-15 minutes to ensure vegetables roast evenly.
