Creamy Cilantro Coleslaw

If you love fish or shrimp tacos, this is the perfect topping. This also makes a great side dish for barbecue ribs,  smoked brisket, carnitas tacos, or grilled chicken.

If you can’t find a sweet red onion, use a sweet white onion or 1/4 cup minced regular red onion.

Makes 6 cups

For the Coleslaw Dressing
½ cup mayonnaise
Juice from one lime
1 teaspoon granulated sugar
½ teaspoon kosher salt
½ teaspoon black pepper

For the Coleslaw
10-ounce package coleslaw mix
½ cup Honeysuckle Red Onion, minced (~1/4 onion)
1 large red, orange, or yellow bell pepper, seeded and diced
1 serrano  pepper, minced
1 bunch cilantro, leaves and stems, minced

  1. In a large mixing bowl combine all ingredients for the coleslaw dressing. Whisk to combine.
  2. Add coleslaw mix, onion, bell pepper, serrano pepper, and cilantro. Toss to combine.
  3. Cover and refrigerate for 30 to 60 minutes before serving.
