If you love fish or shrimp tacos, this is the perfect topping. This also makes a great side dish for barbecue ribs, smoked brisket, carnitas tacos, or grilled chicken.
If you can’t find a sweet red onion, use a sweet white onion or 1/4 cup minced regular red onion.
Makes 6 cups
For the Coleslaw Dressing
½ cup mayonnaise
Juice from one lime
1 teaspoon granulated sugar
½ teaspoon kosher salt
½ teaspoon black pepper
For the Coleslaw
10-ounce package coleslaw mix
½ cup Honeysuckle Red Onion, minced (~1/4 onion)
1 large red, orange, or yellow bell pepper, seeded and diced
1 serrano pepper, minced
1 bunch cilantro, leaves and stems, minced
- In a large mixing bowl combine all ingredients for the coleslaw dressing. Whisk to combine.
- Add coleslaw mix, onion, bell pepper, serrano pepper, and cilantro. Toss to combine.
- Cover and refrigerate for 30 to 60 minutes before serving.
